  • In a medium bowl, add the peeled and deveined shrimp. Sprinkle the Cajun seasoning over the shrimp and toss well to ensure they are evenly coated with the spices.
  • Heat the olive oil in a large skillet over medium heat. Once hot, add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and transfer them to a plate. Set aside.
  • In the same skillet, add the diced onion and bell pepper. Sauté the vegetables for approximately 4-5 minutes, or until they become tender, stirring occasionally.
  • Add the minced garlic to the skillet and cook for an additional minute until fragrant, being careful not to burn the garlic.
  • Stir in the diced tomatoes and allow the mixture to simmer for about 3-4 minutes, letting the flavors meld together.
  • Reduce the heat to low, and pour in the heavy cream. Stir gently and let the sauce come to a gentle simmer, cooking for about 2 minutes or until it begins to thicken slightly.
  • Gradually add the grated Parmesan cheese to the sauce, stirring continuously until the cheese melts and integrates into the creamy mixture. Taste and season with extra salt and pepper as needed.
  • Carefully add the cooked pasta and sautéed shrimp back into the skillet. Toss everything together until the shrimp and pasta are thoroughly coated in the rich Cajun cream sauce.
  • Remove the skillet from heat. To serve, garnish with freshly chopped parsley for a burst of color and additional flavor.

Notes

Serve the pasta in wide, shallow bowls for an elegant look. Top with extra Parmesan cheese and a sprinkle of paprika for a pop of color.
